For the Tostadas
- 8 small corn tortillas
- 1 tablespoon olive oil
- 1 ½ cups refried beans (canned or homemade)
- 1 teaspoon taco seasoning (optional)

- 1 cup shredded lettuce
- ½ cup diced tomatoes
- ¼ cup chopped red onion
- ¼ cup sliced black olives
- 1 avocado (sliced or mashed)

- Fresh cilantro for garnish
Instructions
- Preheat the Oven: Set your oven to 400°F (200°C) to prepare for baking the tortillas.
- Brush and Bake Tortillas: Lightly brush both sides of each corn tortilla with olive oil. Arrange them in a single layer on a baking sheet. Bake for 5 to 6 minutes on one side until crisp and golden, then flip and bake the other side for another 5 to 6 minutes.
- Warm the Beans: While tortillas bake, heat refried beans in a small saucepan over medium heat. Season with taco seasoning if desired, and add salt and pepper to taste. Stir occasionally until hot.
- Assemble the Tostadas: Remove the crisp tortillas from the oven. Spread a warm layer of refried beans evenly on each.
- Add Cheese and Melt: Sprinkle shredded cheese on top of the beans. Return the tostadas to the oven for 2 to 3 minutes until the cheese has melted.
- Top with Fresh Ingredients: Take the tostadas out and immediately add shredded lettuce, diced tomatoes, chopped red onion, sliced black olives, and avocado. Finish with a dollop of sour cream or Greek yogurt.
- Garnish and Serve: Sprinkle fresh cilantro on top for garnish and serve the tostadas immediately while warm and crispy.
