Description

These Minute Oven-Baked Tostadas are a quick and delicious Mexican-inspired meal featuring crispy corn tortillas topped with warm refried beans, melted cheese, fresh vegetables, and creamy avocado. Perfect for a light lunch or easy dinner, they are customizable with optional protein additions and suitable for vegetarians.

Ingredients

Scale

For the Tostadas

  • 8 small corn tortillas
  • 1 tablespoon olive oil
  • 1 ½ cups refried beans (canned or homemade)
  • 1 teaspoon taco seasoning (optional)
  • Salt and pepper to taste

Toppings

  • 1 cup shredded cheddar or Mexican blend cheese
  • 1 cup shredded lettuce
  • ½ cup diced tomatoes
  • ¼ cup chopped red onion
  • ¼ cup sliced black olives
  • 1 avocado (sliced or mashed)
  • ¼ cup sour cream or Greek yogurt
  • Fresh cilantro for garnish

Instructions

  1. Preheat the Oven: Set your oven to 400°F (200°C) to prepare for baking the tortillas.
  2. Brush and Bake Tortillas: Lightly brush both sides of each corn tortilla with olive oil. Arrange them in a single layer on a baking sheet. Bake for 5 to 6 minutes on one side until crisp and golden, then flip and bake the other side for another 5 to 6 minutes.
  3. Warm the Beans: While tortillas bake, heat refried beans in a small saucepan over medium heat. Season with taco seasoning if desired, and add salt and pepper to taste. Stir occasionally until hot.
  4. Assemble the Tostadas: Remove the crisp tortillas from the oven. Spread a warm layer of refried beans evenly on each.
  5. Add Cheese and Melt: Sprinkle shredded cheese on top of the beans. Return the tostadas to the oven for 2 to 3 minutes until the cheese has melted.
  6. Top with Fresh Ingredients: Take the tostadas out and immediately add shredded lettuce, diced tomatoes, chopped red onion, sliced black olives, and avocado. Finish with a dollop of sour cream or Greek yogurt.
  7. Garnish and Serve: Sprinkle fresh cilantro on top for garnish and serve the tostadas immediately while warm and crispy.

Notes

  • Add cooked shredded chicken, ground beef, or black beans to increase protein content.
  • For a vegan version, use plant-based cheese alternatives and substitute sour cream with vegan yogurt or skip completely.
  • You can customize toppings to your preference, such as adding jalapeños or salsa for extra heat.
