Description

These Mini Chicken Fajita Wonton Cups are delicious bite-sized appetizers combining the flavors of classic chicken fajitas with crispy baked wonton wrappers. Perfect for parties or quick snacks, they feature tender shredded chicken, sautéed bell peppers and onions, seasoned with chili powder, cumin, garlic, and paprika, topped with melted cheese and served with sour cream and salsa.

Ingredients

Scale

Wonton Cups

  • 24 wonton wrappers
  • Cooking spray or a little oil for brushing

Chicken Fajita Filling

  • 2 cups cooked shredded chicken
  • 1 tablespoon olive oil
  • 1 small bell pepper, diced
  • 1 small onion, diced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste

Toppings and Serving

  • 1 cup shredded cheddar or Mexican blend cheese
  • 1/2 cup sour cream for serving
  • 1/2 cup salsa for serving
  • 1/4 cup chopped fresh cilantro for garnish (optional)

Instructions

  1. Prepare the Wonton Cups: Preheat the oven to 375°F (190°C). Lightly grease a mini muffin tin. Press one wonton wrapper into each muffin cup, shaping it into a small cup. Lightly spray or brush each wrapper with oil to help them crisp up during baking.
  2. Bake the Wonton Cups: Place the muffin tin in the oven and bake the wonton wrappers for 5 to 7 minutes until they become lightly golden and firm enough to hold filling.
  3. Sauté the Vegetables: While the wonton cups bake, heat olive oil in a skillet over medium heat. Add the diced bell pepper and onion, cooking for 3 to 4 minutes until they soften and become fragrant.
  4. Add Chicken and Spices: Stir in the shredded chicken along with chili powder, cumin, garlic powder, paprika, salt, and black pepper. Cook the mixture for another 2 to 3 minutes, ensuring the chicken is heated through and well combined with the spices and vegetables.
  5. Assemble the Cups: Remove the baked wonton cups from the oven. Fill each cup evenly with the chicken fajita mixture, then top each with shredded cheese.
  6. Bake to Melt Cheese: Return the filled wonton cups to the oven and bake for an additional 5 to 7 minutes until the cheese melts and the edges of the wonton cups become crispy.
  7. Serve: Remove from the oven and allow to cool slightly. Serve warm with sour cream and salsa on the side, garnished with chopped cilantro if desired.
