For Poblano Cream Sauce:
- 2 poblano peppers, roasted and peeled
- 1/2 cup sour cream
- 1/2 cup cream cheese
- 1/4 cup milk
- 1/4 cup chopped cilantro
- 1 small garlic clove
- 1/4 small white onion
- 1 tablespoon butter
- 1 tablespoon oil
- 1/2 teaspoon chicken bouillon powder (optional)
- Salt and pepper to taste
For Topping:
- 1/4 cup grated Cotija or Parmesan cheese
Instructions
- Cook the Spaghetti: Cook spaghetti until al dente. Drain and set aside.
