  • 1/2 cup breadcrumbs
  • 1/2 cup milk
  • 1 large egg
  • 1/4 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheddar cheese (optional)

Topping:

  • 1/4 cup ketchup

Garnish:

  • Chopped parsley for garnish (optional)

Instructions

  1. Preheat oven: Preheat oven to 375°F (190°C) and lightly grease a standard 12-cup muffin tin.
  2. Prepare meat mixture: In a large bowl, combine ground beef, breadcrumbs, milk, egg, ketchup, Worcestershire sauce, onion powder, garlic powder, salt, pepper, and shredded cheese if using. Mix until well combined but not overworked.
  3. Fill muffin cups: Divide mixture evenly among the muffin cups, pressing gently to fill each. Top each mini meatloaf with a small spoonful of ketchup.
  4. Bake: Bake for 20–25 minutes or until fully cooked and internal temperature reaches 160°F (71°C).
  5. Rest and serve: Let rest for 5 minutes before removing from the pan. Garnish with parsley if desired and serve warm.
