Description

Indulge in the luscious and romantic Marry Me No Bake Raspberry Chocolate Mousse Cups, an easy-to-make layered dessert featuring a chocolate cookie crust, rich chocolate mousse, and a fresh raspberry sauce. Perfect for special occasions or an elegant treat, this no-bake dessert combines creamy textures and vibrant fruit flavors for a delightful finish.

Ingredients

Scale

For the crust:

  • 1 cup chocolate cookie crumbs (like Oreos, crushed with filling)
  • 3 tablespoons unsalted butter (melted)

For the chocolate mousse:

  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream (warmed)
  • 1 cup cold heavy cream (for whipping)
  • 1 teaspoon vanilla extract
  • Pinch of salt

For the raspberry layer:

  • 1 cup fresh raspberries
  • 1 tablespoon granulated sugar
  • 1 teaspoon lemon juice

For garnish (optional):

  • Extra raspberries
  • Shaved chocolate
  • Whipped cream
  • Mint leaves

Instructions

  1. Prepare the crust: In a medium bowl, combine the chocolate cookie crumbs and melted butter until fully combined. Spoon about 2 tablespoons into the bottom of each serving cup or glass and gently press down to form the crust layer. Set aside.
  2. Make the chocolate mousse: In a heat-safe bowl, pour the warm cream over the chocolate chips. Let sit for 1–2 minutes to melt, then stir until smooth. Allow the mixture to cool to room temperature. In a separate bowl, whip the cold heavy cream with vanilla and a pinch of salt until soft peaks form. Gently fold the whipped cream into the cooled chocolate mixture until light and fluffy.
  3. Prepare the raspberry layer: In a small saucepan over medium heat, combine the fresh raspberries, granulated sugar, and lemon juice. Cook for 3–4 minutes until the berries break down and the mixture thickens slightly. Remove from heat and let cool. For a smoother sauce, strain through a fine mesh sieve to remove seeds if desired.
  4. Assemble the cups: Spoon a layer of chocolate mousse over the crust in each cup. Add a spoonful of raspberry sauce on top, then add another layer of mousse if desired.
  5. Garnish and chill: Garnish each cup with fresh raspberries, shaved chocolate, whipped cream, and/or mint leaves as desired. Chill the assembled cups for at least 1 hour before serving to set the mousse and allow flavors to meld.

Notes

  • For a smoother raspberry sauce, strain through a fine mesh sieve to remove seeds.
  • These mousse cups can be made up to a day in advance and stored in the refrigerator to enhance flavors.
  • Use high-quality semi-sweet chocolate for the best taste and texture.
  • Ensure the heavy cream for whipping is well chilled to achieve stiff peaks.
  • Customize garnish based on your preference for presentation and flavor.
