- ¼ cup (60 ml) mango nectar or mango puree
- ¼ tsp (0.6 g) citric acid (from total ¾ tsp)
- ½ cup (120 ml) water
- ½ tsp (1 g) green coffee extract powder (optional)
- Ice cubes
Garnish
- ¼ cup (20 g) freeze-dried dragon fruit pieces
- Optional: fresh mango slices or sprigs of mint
Instructions
- Make Dragon Fruit Syrup: Combine 1 ½ cups (355 ml) water, granulated sugar, and chopped dragon fruit or dragon fruit powder in a medium saucepan. Heat over medium, stirring continuously until sugar dissolves. Simmer gently for 15-20 minutes until syrup thickens slightly and looks glossy, taking care not to burn it.
- Strain the Mixture: Pour the syrup through a fine mesh strainer into a bowl or jar. Press the dragon fruit solids gently with a spoon or spatula to extract maximum juice. Be cautious as syrup will be hot.
- Combine Ingredients: In a shaker, combine ½ cup dragon fruit syrup, ¼ cup mango nectar, ¼ tsp citric acid, ½ cup water, and green coffee extract powder if using. Add ice cubes until nearly full. Secure the lid and shake vigorously for 15 seconds to chill and blend.
- Serve Over Ice: Fill each glass with fresh ice cubes. Pour the shaken mixture over the ice. Sprinkle freeze-dried dragon fruit pieces on top for an elegant finish and extra flavor.
