Ingredients

For the Crust:

1 1/2 cups graham cracker crumbs, 1/4 cup granulated sugar, 5 tablespoons unsalted butter, melted.

For the Filling:

3 (8-ounce) packages cream cheese, softened, 1 cup granulated sugar, 3 large eggs, 1/4 cup sour cream, 2 teaspoons vanilla extract, zest of 1 lemon, 1/4 cup fresh lemon juice, 1 tablespoon all-purpose flour, 1 1/2 cups fresh raspberries.

For Garnish:

Powdered sugar and lemon zest curls (optional).


Instructions

  1. Preheat and Prepare: Preheat oven to 325°F. Grease a 9-inch springform pan.
  2. Make the Crust: Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into pan bottom. Bake for 10 mins.
  3. Prepare the Filling: Beat cream cheese until smooth. Add 1 cup sugar, eggs, sour cream, vanilla, lemon zest, juice, and flour. Fold in raspberries.
  4. Bake: Pour filling into crust. Bake 55–65 mins. Let cool in oven for 1 hour. Chill for 4 hours.
  5. Serve: Top with raspberries, powdered sugar, and lemon zest curls.
