  • 1/4 cup fresh lemon juice

  • 4 tablespoons unsalted butter

For the meringue:

  • 3 large egg whites
  • 1/4 teaspoon cream of tartar
  • 1/4 cup granulated sugar

Instructions

  1. Preheat the oven: Preheat oven to 325°F. Line the bottom of a 9-inch springform pan with parchment paper and lightly grease the sides.
  2. Prepare the crust: Combine graham cracker crumbs, sugar, and melted butter. Press into the pan and bake for 8 minutes.
  3. Make the cheesecake layer: Beat cream cheese until smooth. Add sugar, eggs, sour cream, lemon juice, lemon zest, and vanilla. Pour over crust and bake.
  4. Prepare the lemon curd: Whisk egg yolks, sugar, lemon juice, and zest in a saucepan until thickened. Spread over chilled cheesecake.
  5. Make the meringue: Beat egg whites and cream of tartar until stiff peaks form. Spread over the lemon curd layer.
  6. Toast the meringue: Use a kitchen torch or broiler to toast the meringue until lightly browned. Chill before serving.
