Description

This Korean BBQ Meatloaf offers a delicious twist on a classic comfort food. Juicy ground beef is combined with Korean flavors like gochujang and sesame oil, then topped with a sweet and spicy glaze for a perfect balance of flavors.

Main Meatloaf:

  • 1 1/2 lbs ground beef (85% lean)
  • 1/2 cup panko breadcrumbs
  • 1/4 cup milk
  • 1 large egg
  • 2 green onions (finely chopped)
  • 2 cloves garlic (minced)
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon sesame oil
  • 1/4 cup finely chopped onion
  • 1/4 cup gochujang (Korean chili paste)
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon rice vinegar

For the glaze:

  • 2 tablespoons ketchup
  • 2 tablespoons gochujang
  • 1 tablespoon honey
  • 1 teaspoon soy sauce

Garnish:

  • toasted sesame seeds
  • sliced green onions

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and line a baking sheet or loaf pan with parchment paper.
  2. Prepare panko mixture: In a small bowl, combine panko and milk; let soak for 5 minutes.
  3. Mix meatloaf ingredients: In a large mixing bowl, combine ground beef, soaked panko mixture, egg, green onions, garlic, ginger, sesame oil, chopped onion, gochujang, soy sauce, brown sugar, and rice vinegar. Shape into a loaf on the prepared baking sheet or press into a loaf pan.
  4. Make glaze: In a small bowl, whisk together ketchup, gochujang, honey, and soy sauce for the glaze. Spread half of the glaze over the meatloaf.
  5. Bake: Bake for 40 minutes, then spread the remaining glaze on top and bake for an additional 10–15 minutes until the internal temperature reaches 160°F (71°C).
  6. Rest and garnish: Let the meatloaf rest for 10 minutes before slicing. Garnish with toasted sesame seeds and sliced green onions.

Notes

  • Serve with steamed rice, kimchi, or roasted vegetables for a Korean-inspired comfort meal.
  • For less heat, reduce the gochujang or mix it with extra ketchup.
  • Leftovers make excellent sandwiches.
