- 14 oz kielbasa sausage, sliced into rounds
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups potatoes, peeled and diced
- 3 cups chicken broth
- 1 cup milk
- 1/2 cup heavy cream
- 1/2 teaspoon dried thyme
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon chopped fresh parsley (optional)

- Heat olive oil: In a large pot over medium heat, add olive oil. Cook the sliced kielbasa until browned on both sides, about 5–6 minutes. Remove and set aside.
- Cook onion and garlic: In the same pot, cook the chopped onion until translucent, about 3 minutes. Add garlic and cook for 30 seconds.
- Add potatoes and broth: Stir in diced potatoes, chicken broth, thyme, smoked paprika, salt, and pepper. Bring to a boil, then simmer for 15–20 minutes until potatoes are tender.
- Finish soup: Stir in milk and heavy cream. Return kielbasa to the pot and simmer for another 5–7 minutes. Adjust seasoning if needed. Garnish with parsley before serving.
