Crust:
- 1 1/2 cups almond flour
- 1/4 cup powdered erythritol
- 1/4 cup unsalted butter, melted
- 1/2 teaspoon vanilla extract

Filling:
- 8 oz cream cheese, softened
- 1/4 cup sour cream
- 1/4 cup powdered erythritol
- 1 large egg
- 1 teaspoon vanilla extract
Blueberry Swirl:
- 1/2 cup fresh or frozen blueberries
- 1 tablespoon water
- 1 tablespoon powdered erythritol
- 1/2 teaspoon lemon juice
Instructions
- Preheat oven to 325°F (160°C) and line an 8×8-inch baking pan with parchment paper. For the crust: In a medium bowl, mix almond flour, erythritol, melted butter, vanilla extract, and salt until crumbly. Press the mixture firmly into the bottom of the prepared pan. Bake for 10 minutes, then set aside to cool slightly. For the blueberry swirl: In a small saucepan over medium heat, combine blueberries, water, erythritol, and lemon juice. Cook for 5–7 minutes, mashing the berries as they break down, until thickened. Set aside to cool. For the filling: Beat cream cheese and erythritol in a bowl until smooth. Add sour cream, egg, and vanilla extract, mixing until fully combined. Pour the filling over the cooled crust and smooth the top. Spoon the blueberry mixture over the cheesecake and swirl gently with a knife or toothpick. Bake for 20 to 25 minutes, or until the edges are set and the center is slightly jiggly. Cool completely, then refrigerate for at least 2 hours before slicing into bars.
