- 1 can (14.5 ounces) diced tomatoes
- 1 can (15 ounces) white beans, drained and rinsed
- 4 cups low-sodium chicken broth
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/4 teaspoon crushed red pepper flakes (optional)
- Salt and black pepper to taste
- 2 cups fresh spinach or kale, chopped

Instructions
- Heat olive oil: In a large pot over medium heat, heat olive oil. Add ground turkey and cook until browned.
- Sauté onion and garlic: Add diced onion and minced garlic, sauté until fragrant.
- Cook vegetables: Stir in carrots, celery, and zucchini, cook until beginning to soften.
- Add remaining ingredients: Pour in tomatoes, white beans, chicken broth, herbs, red pepper flakes, salt, and pepper. Bring to a boil, then simmer for 20-25 minutes.
- Finish soup: Stir in spinach and cook until wilted. Adjust seasoning if needed. Serve hot with Parmesan cheese.
