  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (15 ounces) white beans, drained and rinsed
  • 4 cups low-sodium chicken broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Salt and black pepper to taste
  • 2 cups fresh spinach or kale, chopped
  • Grated Parmesan cheese for serving (optional)

Instructions

  1. Heat olive oil: In a large pot over medium heat, heat olive oil. Add ground turkey and cook until browned.
  2. Sauté onion and garlic: Add diced onion and minced garlic, sauté until fragrant.
  3. Cook vegetables: Stir in carrots, celery, and zucchini, cook until beginning to soften.
  4. Add remaining ingredients: Pour in tomatoes, white beans, chicken broth, herbs, red pepper flakes, salt, and pepper. Bring to a boil, then simmer for 20-25 minutes.
