  • 2 lbs Yukon gold potatoes, thinly sliced
  • 1 packet (1 oz) French onion soup mix
  • ½ cup sour cream
  • ¼ cup milk
  • ½ teaspoon garlic powder
  • Salt and black pepper to taste

Caramelized Onions:

  • 2 tablespoons olive oil
  • 1 large yellow onion, thinly sliced

Additional Ingredients:

  • 1 cup shredded Gruyère or Swiss cheese
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Preheat the Oven: Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Caramelize Onions: In a large skillet, heat olive oil over medium heat. Add sliced onions and cook until golden and caramelized, about 15–20 minutes.
  3. Prepare Potato Mixture: In a large bowl, combine sliced potatoes, French onion soup mix, sour cream, milk, garlic powder, salt, and pepper. Stir in the caramelized onions and half of the shredded cheese.
  4. Bake: Transfer the mixture to the prepared baking dish and spread evenly. Top with the remaining cheese. Cover with foil and bake for 40 minutes. Remove the foil and bake for an additional 15–20 minutes until the top is golden and the potatoes are tender.
  5. Rest and Garnish: Let rest for 5 minutes before serving. Garnish with fresh parsley if desired.
