Instructions

  1. Brown Beef: Set the Instant Pot to “Sauté Normal.” Add butter or oil and brown the ground beef until fully cooked and no longer pink, stirring occasionally to break up the meat.
  2. Add Ingredients: Pour in the condensed chicken broth, milk, salt, pepper, onion powder, and garlic powder. Stir to combine. Add the rice and press down gently to submerge it into the liquid.
  3. Layer Tomato Soup and Corn: Spoon the condensed tomato soup evenly over the rice without stirring. Then sprinkle the drained corn on top, also without mixing to prevent burning at the bottom.
  4. Pressure Cook: Secure the Instant Pot lid and set the valve to the “Sealing” position. Pressure cook on High for 7 minutes.
  5. Quick Release and Stir: When cooking is complete, immediately perform a quick release by carefully turning the steam release handle to “Venting.” Remove the lid and stir the mixture well to combine all ingredients.
  6. Add Cheese: Stir in the shredded mozzarella and cheddar cheese blend until melted and creamy. Serve hot and enjoy!
