Ingredients
Scale
Ground Beef Mixture
- 1 lb lean ground beef
- 1 (10.5 oz) can condensed chicken broth
- 2 ½ cups milk
- 1 ½ teaspoons salt
- 1 ½ teaspoons pepper
- 2 teaspoons onion powder
- 2 teaspoons garlic powder
Rice and Vegetables
- 2 cups long-grain white rice
- 1 (10.75 oz) can condensed tomato soup
- 1 (8.75 oz) can corn, drained
Cheese
- 2 cups shredded mozzarella and cheddar cheese blend
Instructions
- Brown Beef: Set the Instant Pot to “Sauté Normal.” Add butter or oil and brown the ground beef until fully cooked and no longer pink, stirring occasionally to break up the meat.
- Add Ingredients: Pour in the condensed chicken broth, milk, salt, pepper, onion powder, and garlic powder. Stir to combine. Add the rice and press down gently to submerge it into the liquid.
- Layer Tomato Soup and Corn: Spoon the condensed tomato soup evenly over the rice without stirring. Then sprinkle the drained corn on top, also without mixing to prevent burning at the bottom.
- Pressure Cook: Secure the Instant Pot lid and set the valve to the “Sealing” position. Pressure cook on High for 7 minutes.
- Quick Release and Stir: When cooking is complete, immediately perform a quick release by carefully turning the steam release handle to “Venting.” Remove the lid and stir the mixture well to combine all ingredients.
- Add Cheese: Stir in the shredded mozzarella and cheddar cheese blend until melted and creamy. Serve hot and enjoy!
Notes
- Use lean ground beef to reduce excess grease and improve texture.
- Do not stir the tomato soup and corn into the rice before cooking to avoid burning and clumping at the bottom.
- You can substitute long-grain white rice with jasmine or basmati rice for a slightly different texture.
- For extra flavor, consider adding chopped onions or bell peppers before browning the beef.
- Ensure the valve is set correctly to the sealing position to build pressure properly.
- Use a sharp cheese blend for best melting results.
