Instructions
- Mix Dry Ingredients: In a large bowl, combine the cornmeal, salt, and sugar (if using). Stir well to evenly distribute the ingredients.
- Add Boiling Water: Gradually pour the boiling water into the cornmeal mixture, stirring continuously until the mixture is fully moistened and thickened.
- Heat Oil: Pour vegetable oil into a skillet, heating it over medium-high heat until the oil is about 1/2 inch deep and hot enough for frying.
- Shape Patties: Using your hands, form the cornmeal mixture into small patties roughly the size of golf balls, flattening them slightly for even cooking.
- Fry Patties: Carefully place the patties into the hot oil. Fry for about 2-3 minutes on each side, or until golden brown and crispy.
- Drain and Serve: Remove the fried cornbread from the oil and place on paper towels to drain excess oil. Serve warm for best flavor.
