Cookies:
- 1 cup unsalted butter, softened

- ¾ cup creamy peanut butter
- ¼ cup unsalted butter, softened
- 2 cups powdered sugar
- 2–3 tablespoons milk
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C).
- Cream ingredients: In a large bowl, cream together the butter, peanut butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time.
- Mix dry ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually mix the dry ingredients into the wet ingredients until a soft dough forms.
- Form cookies: Roll dough into 1-inch balls, place on a parchment-lined baking sheet, and flatten each slightly with a fork in a crisscross pattern or mold into a peanut shape.
- Bake: Bake for 10–12 minutes, until edges are lightly golden. Let cookies cool completely on a wire rack.
- Make filling: Beat the peanut butter and butter together until smooth. Gradually add powdered sugar, then mix in milk, one tablespoon at a time, until a creamy consistency is reached.
- Assemble cookies: Spread a layer of filling on the flat side of one cookie and sandwich with another. Repeat with remaining cookies.
