Description

These Homemade Nutter Butter Cookies are a delightful twist on the classic store-bought treat. With a soft, peanut buttery cookie exterior and a creamy peanut butter filling, these sandwich cookies are sure to be a hit with peanut butter lovers of all ages.

Ingredients

Scale

Cookies:

  • 1 cup unsalted butter, softened
  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt

Filling:

  • ¾ cup creamy peanut butter
  • ¼ cup unsalted butter, softened
  • 2 cups powdered sugar
  • 23 tablespoons milk

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C).
  2. Cream ingredients: In a large bowl, cream together the butter, peanut butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time.
  3. Mix dry ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually mix the dry ingredients into the wet ingredients until a soft dough forms.
  4. Form cookies: Roll dough into 1-inch balls, place on a parchment-lined baking sheet, and flatten each slightly with a fork in a crisscross pattern or mold into a peanut shape.
  5. Bake: Bake for 10–12 minutes, until edges are lightly golden. Let cookies cool completely on a wire rack.
  6. Make filling: Beat the peanut butter and butter together until smooth. Gradually add powdered sugar, then mix in milk, one tablespoon at a time, until a creamy consistency is reached.
  7. Assemble cookies: Spread a layer of filling on the flat side of one cookie and sandwich with another. Repeat with remaining cookies.

Notes

  • Store cookies in an airtight container for up to 5 days.
