Description

Ho Ho Cake is a festive layered chocolate cake featuring moist chocolate cake layers filled with creamy vanilla frosting and finished with a rich chocolate frosting. Perfect for holiday celebrations, this cake boasts a delightful contrast of flavors and textures, making it a crowd-pleaser for family and friends.

Ingredients

Scale

Cake

  • 1 box (15.25 ounces) chocolate cake mix (Betty Crocker brand recommended)
  • Eggs, oil, and water as called for on back of cake mix box

White Vanilla Cream Frosting

  • 3/4 cup salted butter, softened
  • 1/4 cup milk
  • 1 Tablespoon vanilla extract
  • 3 cups powdered sugar

Chocolate Frosting

  • 1/2 cup salted butter, softened
  • 1 teaspoon vanilla extract
  • 3/4 cup unsweetened cocoa powder
  • 3 cups powdered sugar
  • 4 Tablespoons water

Instructions

  1. Preheat and prepare pans: Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans thoroughly to prevent sticking.
  2. Make the cake batter and bake: Prepare the cake mix according to the package instructions using eggs, oil, and water. Divide the batter evenly between the two prepared pans. Bake as directed on the cake mix box until a toothpick inserted comes out clean.
  3. Cool and layer the cakes: Let the cakes cool in their pans for 10 minutes, then invert onto a cooling rack. Allow the cakes to cool completely for 1 hour. Once cooled, cut each cake horizontally in half to create four thin layers.
  4. Prepare the white vanilla cream frosting: Using an electric mixer, beat the softened butter and milk until combined. Add vanilla extract and mix again. Gradually add powdered sugar one cup at a time, continuing to beat on medium speed for 5-10 minutes until creamy and smooth. Adjust milk if frosting is too thick.
  5. Prepare the chocolate frosting: Beat the softened butter and vanilla extract until combined. Add cocoa powder slowly at low speed until mixed thoroughly. Gradually add powdered sugar and water (one tablespoon at a time) until you reach a creamy consistency. You might not need all the water.
  6. Assemble the cake layers: Place one cake layer on a cake stand or plate. Spread 1/3 of the vanilla cream frosting evenly over the top. Repeat this process with the next two layers and vanilla frosting, stacking them carefully.
  7. Frost the cake: Place the final cake layer on top. Spread the chocolate frosting evenly over the cake’s top and sides, smoothing it out for a clean finish.
  8. Serve: Slice the cake and enjoy your decadent Ho Ho Cake!

Notes

  • Ensure cake layers are completely cool before slicing to prevent crumbling.
  • Adjust milk or water slightly in frostings if you prefer different consistencies.
  • For a richer taste, use high-quality cocoa powder and fresh vanilla extract.
  • You can substitute salted butter with unsalted butter and add a pinch of salt if desired.
  • Store leftover cake covered in the refrigerator to maintain freshness for up to 3 days.
