Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
- Mix wet ingredients: In a large bowl, whisk together the Greek yogurt, honey, olive oil, eggs, lemon zest, lemon juice, and vanilla until smooth.
- Combine dry ingredients: In a separate bowl, mix the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet, stirring until just combined—do not overmix.
- Bake: Pour the batter into the prepared loaf pan and smooth the top. Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and glaze: Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. If using the glaze, whisk together powdered sugar and lemon juice until smooth, then drizzle over the cooled loaf.
