  • 2 boneless, skinless chicken breasts (halved horizontally to make 4 thin cutlets)
  • 1/2 cup whole wheat breadcrumbs

  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg (beaten)
  • 1 cup marinara sauce (low sugar)
  • 1/2 cup part-skim shredded mozzarella cheese
  • olive oil spray
  • fresh basil or parsley for garnish (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Prepare breadcrumb mixture: In a shallow bowl, combine the breadcrumbs, Parmesan cheese, Italian seasoning, garlic powder, salt, and pepper.
  3. Beat the egg: In another bowl, beat the egg.
  4. Coat the chicken: Dip each chicken cutlet into the egg, then coat in the breadcrumb mixture, pressing to adhere.
  5. Bake: Place the breaded chicken on the prepared baking sheet, spray the tops with olive oil, and bake for 15 to 18 minutes until golden and cooked through.
