Instructions

  2. Stir in the onion and garlic, cook until softened.
  3. Add zucchini and bell pepper, sauté until slightly tender.
  4. Mix in chickpeas, tomatoes, spices, cover, and simmer for 10 minutes.
  5. Remove from heat, stir in parsley, and serve with lemon wedges.
