Ingredients
Scale
For the Chicken Marinade
- 1 pound boneless skinless chicken thighs, cut into strips
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1/4 cup soy sauce
- 2 tablespoons fish sauce
- 2 tablespoons brown sugar
- 1 tablespoon lime juice
- 1 tablespoon sesame oil
- 1 teaspoon turmeric
- 1/2 teaspoon black pepper
For Assembly and Garnish
- Wooden or metal skewers (if wooden, soak in water for 30 minutes)
- 1/4 cup chopped fresh cilantro, for garnish
Instructions
- Prepare the Marinade: In a large bowl, combine the vegetable oil, minced garlic, grated ginger, soy sauce, fish sauce, brown sugar, lime juice, sesame oil, turmeric, and black pepper. Mix thoroughly to create a flavorful marinade.
- Marinate the Chicken: Add the chicken thigh strips to the marinade and toss well to coat all pieces evenly. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or up to 8 hours for a deeper, more intense flavor.
- Prepare Skewers: If using wooden skewers, soak them in water for 30 minutes beforehand to prevent burning during grilling. Thread the marinated chicken strips onto the skewers, distributing the meat evenly.
- Preheat the Grill: Heat your grill or grill pan to medium-high heat. Lightly oil the grill grates to prevent sticking and ensure even cooking.
- Grill the Chicken Skewers: Place the chicken skewers on the hot grill and cook for 10 to 12 minutes, turning occasionally to achieve a slightly charred, caramelized exterior while ensuring the chicken is cooked through thoroughly.
- Serve: Remove the skewers from the grill and garnish with freshly chopped cilantro. Serve immediately, optionally with peanut sauce or sweet chili sauce for dipping, and accompany with jasmine rice or cucumber salad for a complete meal.
Notes
- Serve with peanut sauce or sweet chili sauce for an added flavorful dip.
- Chicken breast can be substituted but tends to be less juicy than thighs.
- Add a side of jasmine rice or a refreshing cucumber salad to complete the meal.
