- 1 can (15 ounces) chickpeas, drained and rinsed
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 6 small corn or flour tortillas
- 1 cup shredded lettuce
- 1/2 cup sliced cucumber
- 1/2 cup sliced avocado
- 1/4 cup chopped green onions
- 2 tablespoons chopped fresh parsley
- 2 tablespoons chopped fresh basil
- 2 tablespoons chopped fresh chives
Green Goddess Sauce
- 1/2 cup Greek yogurt or vegan yogurt
- 1/4 cup mayonnaise
- 1/4 cup fresh parsley
- 1/4 cup fresh basil
- 2 tablespoons chives
- 1 garlic clove
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- salt and pepper to taste
Instructions
- Roast Chickpeas: Preheat your oven to 400°F (200°C). Pat the chickpeas dry with a towel to remove excess moisture. Toss them in olive oil, salt, black pepper, cumin, and smoked paprika until evenly coated. Spread chickpeas on a baking sheet in a single layer and roast for 20 to 25 minutes, shaking the pan halfway through, until they are crispy and golden brown.
- Prepare Green Goddess Sauce: While the chickpeas roast, combine Greek yogurt or vegan yogurt, mayonnaise, fresh parsley, basil, chives, garlic clove, lemon juice, olive oil, and a pinch of salt and pepper in a food processor. Blend until the mixture is smooth and creamy. Taste and adjust seasoning if necessary.
- Warm Tortillas: Heat the tortillas in a dry skillet over medium heat for about 30 seconds per side or warm them in the microwave for 15-20 seconds wrapped in a damp towel until soft and pliable.
- Assemble Tacos: Spread a generous spoonful of Green Goddess sauce onto each warm tortilla. Layer with shredded lettuce, crispy roasted chickpeas, sliced cucumber, avocado, chopped green onions, and fresh herbs such as parsley, basil, and chives.
- Serve: Drizzle additional Green Goddess sauce on top if desired and serve immediately to enjoy the combination of crispy, fresh, and creamy textures and flavors.
Notes
- For added protein, top with grilled chicken or tofu.
- The Green Goddess sauce can be prepared in advance and stored covered in the refrigerator for up to 5 days.
