Orzo:

  • 1 cup dry orzo pasta

Green Goddess Sauce:

  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1/2 cup baby spinach, chopped
  • 1/4 cup fresh basil leaves, chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons chives, chopped
  • 1/4 cup Greek yogurt
  • 1/4 cup mayonnaise
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup crumbled feta cheese (optional)

Instructions

  1. Cook Orzo: Cook the orzo until al dente, according to package instructions. Drain and set aside.
  2. Sauté Garlic: In a skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant.
  3. Prepare Green Goddess Sauce: Blend spinach, basil, parsley, chives, Greek yogurt, mayonnaise, lemon juice, lemon zest, salt, and pepper until smooth.
