Ingredients
Chicken Thighs:
- 6 bone-in, skin-on chicken thighs
Miso Marinade:
- 2 tablespoons gochujang
- 1 tablespoon white miso paste
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 2 garlic cloves, minced
- 1 teaspoon grated fresh ginger

Instructions
- Prepare Marinade: In a bowl, whisk together gochujang, miso paste, soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger until smooth.
- Marinate Chicken: Pat the chicken thighs dry and place them in a large resealable bag or bowl. Pour the marinade over the chicken, toss to coat evenly, and marinate in the refrigerator for at least 1 hour or up to overnight.
- Cook Chicken: Preheat the oven to 400°F (200°C). Heat the vegetable oil in an oven-safe skillet over medium-high heat. Sear the chicken thighs, skin-side down, for 4–5 minutes until golden brown. Flip the chicken and transfer the skillet to the oven. Bake for 20–25 minutes or until the internal temperature reaches 165°F (74°C).
- Rest and Garnish: Remove from the oven and let rest for 5 minutes. Garnish with sliced green onions and sesame seeds before serving.
