Instructions

  1. Prepare the Dough: In a large bowl, combine the all-purpose flour and 1/2 teaspoon salt. Cut the cold unsalted butter into the flour mixture until it resembles coarse crumbs. In a separate small bowl, whisk together the egg and cold water, then gradually add this to the flour mixture. Mix until a soft dough forms. Knead briefly, shape into a ball, wrap in plastic wrap, and refrigerate for 30 minutes to rest.
  2. Cook the Filling: Heat vegetable oil in a skillet over medium heat. Sauté the finely chopped onion until translucent. Add the ground beef and cook until browned thoroughly. Stir in the finely diced carrot, frozen peas, curry powder, ground nutmeg, salt, and black pepper. Continue cooking for about 5 minutes until the vegetables are tender and the mixture has dried out somewhat. Remove from heat and allow the filling to cool completely.
  3. Preheat Oven and Prepare Baking Sheet: Set the oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking.
  4. Roll Out Dough and Assemble Pies: On a lightly floured surface, roll the chilled dough to about 1/8 inch thickness. Cut the dough into rectangles measuring approximately 4 by 6 inches. Place 2 to 3 tablespoons of the cooled meat filling on one half of each rectangle. Fold the dough over to cover the filling and press the edges together, sealing with a fork to create a decorative edge.
