Instructions
- Grate the Potatoes and Onion: Grate the potatoes and onion using a box grater or food processor. Squeeze out excess moisture with a clean kitchen towel.
- Mix the Ingredients: Combine the grated potatoes and onion with eggs, flour, salt, and pepper in a large bowl. Mix well.
- Fry the Pancakes: Heat vegetable oil in a skillet. Drop portions of the mixture into the skillet, flatten slightly, and fry until golden brown and crispy on both sides.
- Drain and Serve: Transfer the pancakes to a paper towel-lined plate to drain excess oil. Serve warm with applesauce or sour cream if desired.
Notes
- To keep pancakes warm while frying, place in a 200°F oven.
- For extra crispiness, spread the batter thinner in the skillet.
