  • 2 rashers eye bacon
  • 2 eggs

  • 2 slices of Irish brown bread, or bacon, chive and cheese soda bread
  • Knob of butter
  • A little olive oil
  • A cup of tea
  • Glass of orange juice

Instructions

  1. Preheat Oven: Preheat the oven to 180°C (350°F) to prepare for baking the potatoes or hash browns.
  2. Bake Potatoes: Place sliced cooked potatoes or hash browns lightly coated with olive oil on a baking sheet and bake in the oven until golden. Season with salt and pepper once cooked.
  3. Heat Beans: Warm the baked beans gently in a small saucepan while cooking the other components.
  4. Cook Sausages and Mushrooms: In a large skillet over medium heat, cook the Irish pork sausage until it’s nearly done. Add a knob of butter to the pan and stir in the mushrooms, cooking them until tender and coated with butter.
  5. Cook Black Pudding: Add the black pudding slices to the skillet and cook for about 4 minutes on each side until well browned and cooked through.
  6. Cook Tomatoes and Bacon: Add the cherry tomatoes and bacon rashers to the same pan, cooking for a couple of minutes until the bacon is cooked and tomatoes soften slightly.
  7. Cook Eggs: Crack the eggs into the skillet and cook them sunny side up to preferred doneness, ensuring the whites are set but yolks remain runny.
  8. Assemble and Serve: Arrange all the cooked ingredients on a plate. Serve with two slices of Irish brown or soda bread spread with butter, a cup of tea, and a glass of orange juice for a classic Irish breakfast experience.
