Description

This Freakin’ Fantastic Fried Rice is a quick and delicious dish perfect for using up day-old rice. Featuring a vibrant mix of tender carrots, peas, scrambled eggs, and flavorful soy and sesame oils, this fried rice is a satisfying and easy meal ready in just 15 minutes.

Ingredients

Scale

Main Ingredients

  • 2 cups cooked rice (preferably day-old)
  • 2 tablespoons vegetable oil
  • 1/2 cup diced carrots
  • 1/2 cup peas
  • 2 eggs, scrambled
  • 1/4 cup soy sauce
  • 1 tablespoon sesame oil
  • 1/4 teaspoon black pepper

Instructions

  1. Heat the Oil: Heat vegetable oil in a large skillet or wok over medium-high heat to prepare for sautéing the vegetables.
  2. Cook Vegetables: Add diced carrots and peas to the hot oil and cook for 2–3 minutes until they become tender but still retain some crispness.
  3. Scramble Eggs: Push the cooked vegetables to one side of the skillet. Crack the eggs onto the empty side and scramble them until fully cooked.
  4. Add Rice: Add the day-old cooked rice to the skillet and combine it thoroughly with the eggs and vegetables, ensuring even distribution.
  5. Season and Stir-Fry: Pour in the soy sauce, sesame oil, and sprinkle black pepper over the rice mixture. Stir-fry everything together for 4–5 minutes until heated through and well-coated with the sauce.
  6. Serve: Remove from heat and serve the fried rice hot for an enjoyable meal.

Notes

  • Using day-old rice helps prevent clumping and creates better fried rice texture.
  • You can substitute vegetables like bell peppers, corn, or green beans based on preference.
  • For extra protein, add cooked chicken, shrimp, or tofu along with the eggs.
  • Adjust soy sauce quantity to control saltiness.
  • Use a wok or non-stick skillet for best frying results.
  • For a spicier kick, add chili flakes or Sriracha sauce.
