- 2 tablespoons vegetable oil
- 1/2 cup diced carrots
- 1/2 cup peas
- 2 eggs, scrambled
- 1/4 cup soy sauce
- 1 tablespoon sesame oil
- 1/4 teaspoon black pepper
Instructions
- Heat the Oil: Heat vegetable oil in a large skillet or wok over medium-high heat to prepare for sautéing the vegetables.
- Cook Vegetables: Add diced carrots and peas to the hot oil and cook for 2–3 minutes until they become tender but still retain some crispness.
- Scramble Eggs: Push the cooked vegetables to one side of the skillet. Crack the eggs onto the empty side and scramble them until fully cooked.
- Add Rice: Add the day-old cooked rice to the skillet and combine it thoroughly with the eggs and vegetables, ensuring even distribution.
- Season and Stir-Fry: Pour in the soy sauce, sesame oil, and sprinkle black pepper over the rice mixture. Stir-fry everything together for 4–5 minutes until heated through and well-coated with the sauce.
- Serve: Remove from heat and serve the fried rice hot for an enjoyable meal.
