Description

Delicate and floral, these Flora Cookies are a perfect treat for any occasion. Made with edible flowers and a hint of citrus, they are both beautiful and delicious.

  • 1/2 cup light brown sugar (packed)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Additional Ingredients:

  • 1/2 cup dried edible flowers (such as lavender, rose petals, and chamomile)
  • 1 tablespoon lemon zest
  • 1/4 cup finely chopped pistachios (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream the butter and sugars: In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add eggs and flavorings: Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and lemon zest.
  4. Combine dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Combine wet and dry ingredients: Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Add flowers and nuts: Gently fold in the dried edible flowers and pistachios if using.
  7. Bake: Scoop tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 10–12 minutes or until the edges are lightly golden.
  8. Cool: Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • You can use a blend of your favorite edible flowers; just make sure they are food-grade and pesticide-free.
  • The pistachios add a nice crunch but can be left out for a nut-free version.
  • A light dusting of powdered sugar after baking adds an elegant touch.
