Description

This European Apple Cake is a delightful dessert that captures the essence of fall with layers of thinly sliced apples nestled in a tender, cinnamon-infused cake. Perfect for any occasion, this rustic treat is simple yet elegant, making it a favorite for breakfast, afternoon tea, or dessert.

Ingredients

Scale

Dry Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon

Wet Ingredients:

  • 1/2 cup unsalted butter, softened
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup whole milk

Apples:

  • 3 medium apples (such as Granny Smith or Honeycrisp), peeled, cored, and thinly sliced
  • 1 tablespoon lemon juice
  • 1 tablespoon sugar (for topping)

Instructions

  1. Preheat and Prepare: Preheat the oven to 350°F (175°C) and grease a 9-inch springform pan or round cake pan.
  2. Mix Dry Ingredients: In a medium bowl, whisk together flour, baking powder, salt, and cinnamon.
  3. Cream Butter and Sugar: In a large mixing bowl, cream the butter and sugar until light and fluffy. Beat in the eggs one at a time, then add vanilla extract. Stir in the milk, then gradually add the dry ingredients and mix until just combined.
  4. Layer Batter and Apples: Toss the sliced apples with lemon juice. Spread half the batter in the prepared pan. Layer half of the apples over the batter. Repeat with remaining batter and top with the rest of the apples in a decorative pattern. Sprinkle 1 tablespoon sugar over the apples.
  5. Bake: Bake for 45–50 minutes or until a toothpick inserted in the center comes out clean and the apples are lightly golden.
  6. Cool and Serve: Let cool in the pan for 10 minutes before transferring to a wire rack. Serve warm or at room temperature.

Notes
