Pasta:

  • 12 ounces pasta (penne or rotini)

Meat Mixture:

  • 1 pound ground beef or ground turkey
  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced

Sauce and Seasonings:

  • 1 (10-ounce) can red enchilada sauce
  • 1 (14.5-ounce) can diced tomatoes
  • 1 cup frozen corn
  • 1 (4-ounce) can diced green chiles
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Toppings:

  • 1 ½ cups shredded cheddar cheese
  • ¼ cup chopped fresh cilantro (optional)

Instructions

  1. Cook the Pasta: Prepare the pasta according to package instructions. Drain and set aside.
  2. Sauté Onion and Meat: In a large skillet, heat olive oil and sauté onion until softened. Add garlic and ground meat, cooking until browned.
  3. Add Sauce and Seasonings: Stir in enchilada sauce, diced tomatoes, corn, green chiles, chili powder, cumin, salt, and pepper. Simmer for 5–7 minutes.
  4. Combine and Melt Cheese: Add cooked pasta to the skillet, mix well. Sprinkle cheddar cheese on top, cover until melted.
  5. Serve: Garnish with cilantro and serve warm.
