Pasta:
- 12 ounces pasta (penne or rotini)
Meat Mixture:
- 1 pound ground beef or ground turkey
- 1 tablespoon olive oil
- 1 small yellow onion, diced
- 2 cloves garlic, minced
Sauce and Seasonings:
- 1 (10-ounce) can red enchilada sauce
- 1 (14.5-ounce) can diced tomatoes
- 1 cup frozen corn
- 1 (4-ounce) can diced green chiles
- 1 teaspoon chili powder
- 1 teaspoon cumin
- ½ teaspoon salt
- ½ teaspoon black pepper
Toppings:
- 1 ½ cups shredded cheddar cheese
- ¼ cup chopped fresh cilantro (optional)
Instructions
- Cook the Pasta: Prepare the pasta according to package instructions. Drain and set aside.
- Sauté Onion and Meat: In a large skillet, heat olive oil and sauté onion until softened. Add garlic and ground meat, cooking until browned.
- Add Sauce and Seasonings: Stir in enchilada sauce, diced tomatoes, corn, green chiles, chili powder, cumin, salt, and pepper. Simmer for 5–7 minutes.
- Combine and Melt Cheese: Add cooked pasta to the skillet, mix well. Sprinkle cheddar cheese on top, cover until melted.
- Serve: Garnish with cilantro and serve warm.

- For a spicier kick, use hot enchilada sauce or add cayenne.
