For the soup:

  • 1 tablespoon olive oil
  • 1 pound ground beef or ground turkey
  • 1 small yellow onion (diced)
  • 2 cloves garlic (minced)
  • 1 (1-ounce) packet taco seasoning
  • 1/2 teaspoon cumin
  • 1/4 teaspoon chili powder
  • 1 (15-ounce) can black beans (drained and rinsed)
  • 1 (15-ounce) can corn (drained)
  • 1 (10-ounce) can Rotel diced tomatoes with green chiles
  • 1 (8-ounce) package cream cheese (softened and cubed)
  • 2 cups beef or chicken broth
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper to taste

For serving:

  • Sour cream
  • Chopped green onions
  • Tortilla chips

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add diced onion and sauté for 3-4 minutes until softened.
  2. Add ground beef and cook until browned, breaking it apart with a spatula. Drain excess grease if needed.
  3. Stir in garlic, taco seasoning, cumin, and chili powder, cooking for 1 minute.
  4. Add black beans, corn, Rotel, and broth, and bring to a simmer.
  5. Add cream cheese and stir until melted and fully incorporated. Reduce heat to low.
  6. Stir in shredded cheddar cheese until smooth. Simmer for 5-10 minutes.
  7. Taste and adjust seasoning with salt and pepper.
  8. Serve hot, topped with sour cream, green onions, and tortilla chips if desired.
