For the soup:
- 1 tablespoon olive oil
- 1 pound ground beef or ground turkey
- 1 small yellow onion (diced)
- 2 cloves garlic (minced)
- 1 (1-ounce) packet taco seasoning
- 1/2 teaspoon cumin
- 1/4 teaspoon chili powder
- 1 (15-ounce) can black beans (drained and rinsed)
- 1 (15-ounce) can corn (drained)
- 1 (10-ounce) can Rotel diced tomatoes with green chiles
- 1 (8-ounce) package cream cheese (softened and cubed)
- 2 cups beef or chicken broth
- 1/2 cup shredded cheddar cheese
- Salt and pepper to taste
For serving:
- Sour cream
- Chopped green onions
- Tortilla chips
Instructions
- In a large pot or Dutch oven, heat olive oil over medium heat. Add diced onion and sauté for 3-4 minutes until softened.
- Add ground beef and cook until browned, breaking it apart with a spatula. Drain excess grease if needed.
- Stir in garlic, taco seasoning, cumin, and chili powder, cooking for 1 minute.
- Add black beans, corn, Rotel, and broth, and bring to a simmer.
- Add cream cheese and stir until melted and fully incorporated. Reduce heat to low.
- Stir in shredded cheddar cheese until smooth. Simmer for 5-10 minutes.
- Taste and adjust seasoning with salt and pepper.
- Serve hot, topped with sour cream, green onions, and tortilla chips if desired.
