Ingredients
Scale
Potatoes
- 1 1/2 pounds baby potatoes, halved
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Creamy Garlic Sauce
- 3 tablespoons vegan butter or regular butter
- 4 garlic cloves, minced
- 1 tablespoon all-purpose flour
- 1 cup unsweetened plant-based milk or regular milk
- 1/4 cup grated Parmesan or nutritional yeast
- 1/4 teaspoon dried thyme
- 2 tablespoons chopped parsley (plus more for garnish)
Instructions
- Preheat and Roast Potatoes: Preheat the oven to 400°F. Toss the halved baby potatoes with olive oil, salt, and pepper, then spread them evenly on a baking sheet. Roast for 25–30 minutes, flipping once halfway through, until golden brown and tender.
- Prepare the Garlic Sauce Roux: While the potatoes roast, melt the butter in a saucepan over medium heat. Add the minced garlic and sauté for 1–2 minutes until fragrant, being careful not to brown it.
- Make the Sauce: Stir in the flour and cook for 1 minute to form a roux. Gradually whisk in the milk, stirring constantly, and cook for 3–5 minutes until the sauce thickens to a creamy consistency.
- Finish the Sauce: Add the grated Parmesan or nutritional yeast, dried thyme, and chopped parsley to the sauce. Stir well to combine and adjust seasoning if needed.
- Combine and Serve: Transfer the roasted potatoes to a serving dish and pour the creamy garlic sauce over them. Garnish with extra chopped parsley and serve warm.
Notes
- For a quicker option, boil the potatoes instead of roasting.
- Use coconut cream or heavy cream for a richer and silkier sauce.
- This dish pairs beautifully with grilled meats, tofu, or as part of a festive holiday spread.
