Description

  • 1 tablespoon coarse sugar for topping (optional)

Instructions

  1. Preheat and Prepare: Preheat the oven to 350°F and grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and orange zest.
  3. Combine Wet Ingredients: In a separate bowl, combine the orange juice, vegetable oil, egg, and vanilla extract.
  4. Mix Batter: Pour the wet ingredients into the dry and stir until just combined—do not overmix. Fold in the cranberries gently.
  5. Bake: Pour the batter into the prepared loaf pan, smooth the top, and sprinkle with coarse sugar if using. Bake for 50–60 minutes until a toothpick inserted into the center comes out clean.
  6. Cool and Serve: Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
