  • 1 pound ground turkey or beef
  • 1 small onion (diced)
  • 3 cloves garlic (minced)
  • 3 cups butternut squash (peeled and cubed)
  • 1 can (15 oz) black beans (rinsed and drained)
  • 1 can (15 oz) diced tomatoes (with juices)
  • 1 can (6 oz) tomato paste
  • 2 cups low-sodium chicken or beef broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • chopped cilantro or green onions (for garnish)

Instructions

  1. Heat the oil and brown the meat: In a large pot, heat olive oil and brown the ground turkey or beef.
  2. Sauté onions and garlic: Add diced onion and garlic, sauté until softened.
  3. Add remaining ingredients: Stir in butternut squash, black beans, tomatoes, tomato paste, broth, and spices.
  4. Simmer: Bring to a boil, then simmer for 25–30 minutes until squash is tender.
  5. Adjust seasoning and serve: Taste and adjust seasoning, then serve hot with garnishes.
