For the Chili:
- 1 tablespoon olive oil
- 1 pound ground turkey or beef
- 1 small onion (diced)
- 3 cloves garlic (minced)
- 3 cups butternut squash (peeled and cubed)
- 1 can (15 oz) black beans (rinsed and drained)
- 1 can (15 oz) diced tomatoes (with juices)
- 1 can (6 oz) tomato paste
- 2 cups low-sodium chicken or beef broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- ½ teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
- chopped cilantro or green onions (for garnish)
Instructions
- Heat the oil and brown the meat: In a large pot, heat olive oil and brown the ground turkey or beef.
- Sauté onions and garlic: Add diced onion and garlic, sauté until softened.
- Add remaining ingredients: Stir in butternut squash, black beans, tomatoes, tomato paste, broth, and spices.
- Simmer: Bring to a boil, then simmer for 25–30 minutes until squash is tender.
- Adjust seasoning and serve: Taste and adjust seasoning, then serve hot with garnishes.
Notes
- Add corn or bell peppers for extra color and flavor.
- For a spicier version, stir in a diced jalapeño or a pinch of cayenne pepper.
