Description

This Dill Pickle Pasta Salad is a creamy and tangy side dish perfect for summer gatherings. With the classic flavors of dill pickles and a hint of mustard, this cold pasta salad is sure to be a crowd-pleaser.

Pasta:

  • 12 oz rotini or elbow macaroni pasta

Dressing:

  • 1 cup chopped dill pickles
  • 1/2 cup pickle juice (divided)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Add-Ins:

  • 1/2 cup diced cheddar cheese
  • 1/4 cup chopped fresh dill
  • 1/4 cup finely chopped red onion

Instructions

  1. Cook the Pasta: Boil the pasta until al dente, then toss with 1/4 cup pickle juice.
  2. Prepare the Dressing: Whisk together remaining pickle juice, mayonnaise, sour cream, mustard, garlic powder, onion powder, salt, and pepper.
