Instructions

  1. Prepare the pan and ghee: Place a non-stick or heavy-bottomed pan on medium heat and pour in the ghee. Allow it to melt completely for a rich base.
  2. Add ricotta cheese: Break the ricotta cheese into the pan with a spatula. Cook for 5-7 minutes, stirring occasionally, until most of the moisture evaporates and the cheese thickens.
  3. Mix milk powder and cream: Lower the flame and quickly stir in the milk powder and optional cream. Continue cooking for 2-3 minutes to combine the ingredients well.
  4. Adjust consistency: If the mixture looks too dry, gradually add whole milk while stirring until it forms a smooth, thick consistency suitable for shaping.
  5. Add sweetness and saffron: Mix in the sugar and saffron strands (if using), cooking until the mixture starts to pull away from the sides of the pan, indicating it’s ready.
  6. Flavor with cardamom: Sprinkle in the cardamom powder and stir well to evenly distribute the authentic Indian flavor.
  7. Cool and knead: Remove the mixture from heat and let it cool slightly. Then knead briefly on a greased surface to smooth the dough.
