Ingredients
Scale
Main Ingredients
- 1 cup Ricotta Cheese
- 1 cup Milk Powder
- 3/4 cup Sugar
- 2 tablespoons Ghee
- 1/4 cup Whole Milk
- 1 teaspoon Cardamom Powder
Optional Ingredients
- 2 tablespoons Cream
- A few strands Saffron (soaked in warm milk)
- 2 tablespoons Cocoa Powder (for chocolate variation)
- 1/2 cup Mango Pulp or Nuts (for fruity twists or toppings)
Instructions
- Prepare the pan and ghee: Place a non-stick or heavy-bottomed pan on medium heat and pour in the ghee. Allow it to melt completely for a rich base.
- Add ricotta cheese: Break the ricotta cheese into the pan with a spatula. Cook for 5-7 minutes, stirring occasionally, until most of the moisture evaporates and the cheese thickens.
- Mix milk powder and cream: Lower the flame and quickly stir in the milk powder and optional cream. Continue cooking for 2-3 minutes to combine the ingredients well.
- Adjust consistency: If the mixture looks too dry, gradually add whole milk while stirring until it forms a smooth, thick consistency suitable for shaping.
- Add sweetness and saffron: Mix in the sugar and saffron strands (if using), cooking until the mixture starts to pull away from the sides of the pan, indicating it’s ready.
- Flavor with cardamom: Sprinkle in the cardamom powder and stir well to evenly distribute the authentic Indian flavor.
- Cool and knead: Remove the mixture from heat and let it cool slightly. Then knead briefly on a greased surface to smooth the dough.
- Shape the pedas: Divide the dough into 12 equal portions and roll each into small balls. Optionally press a peda mold to create decorative designs.
Notes
- Use full-fat ricotta cheese for the best texture and taste.
- Soaking saffron strands in warm milk enhances color and flavor.
- For a chocolate twist, mix cocoa powder into the dough before shaping.
- Adding mango pulp or nuts can create delightful variations and add texture.
- Store pedas in an airtight container in the refrigerator for up to 5 days.
