Wet Ingredients:

  • ¾ cup fresh orange juice
  • ½ cup whole milk
  • ⅓ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Optional: coarse sugar or orange glaze for topping

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C). Line a 12-cup muffin pan with paper liners or lightly grease with nonstick spray.
  2. Prepare the dry ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and orange zest.
  3. Mix the wet ingredients: In another bowl, whisk together the orange juice, milk, oil, eggs, and vanilla extract until well combined.
  4. Combine and bake: Pour the wet ingredients into the dry ingredients and stir just until combined. Divide the batter into muffin cups, filling each about ¾ full.
