For the Chicken:
- 1 pound boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
- 1 teaspoon dried oregano
- ½ teaspoon paprika
- ½ teaspoon garlic powder
- Salt and pepper to taste
- 2 tablespoons olive oil
For the Orzo:
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 1 cup uncooked orzo pasta
- 2 cups low-sodium chicken broth
Additional Ingredients:
- 1 cup cherry tomatoes, halved
- ½ cup Kalamata olives, sliced
- ½ cup crumbled feta cheese
- 2 cups baby spinach
- Juice of ½ lemon
- Chopped fresh parsley for garnish
Instructions
- Season the Chicken: Season the chicken pieces with oregano, paprika, garlic powder, salt, and pepper.
- Cook the Chicken: In a large skillet or sauté pan, heat olive oil over medium-high heat. Add the seasoned chicken and cook for 5–6 minutes until browned and cooked through. Remove chicken and set aside.
- Cook the Orzo: In the same pan, add the diced onion and sauté for 2–3 minutes until softened. Add the minced garlic and orzo, toasting for 1–2 minutes until lightly browned. Pour in the chicken broth and simmer uncovered for 8–10 minutes until orzo is tender.
- Finish the Dish: Stir in cherry tomatoes, olives, feta, spinach, and cooked chicken. Cook for an additional 2–3 minutes until spinach wilts and everything is heated through. Squeeze lemon juice over the top and garnish with parsley.
Notes
- Use rotisserie chicken for a shortcut.
