For the Quesadillas:

  • 4 large flour tortillas
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, hulled and sliced
  • 1/2 cup strawberry jam
  • 2 tablespoons butter, softened

For Serving:

  • 1/4 cup powdered sugar for dusting
  • Optional whipped cream

Instructions

  1. In a medium bowl, beat cream cheese, sugar, and vanilla until creamy.
  2. Spread cream cheese mixture on half of each tortilla.
  3. Top with strawberries and a spoonful of jam.
  4. Fold tortillas in half.
  5. Spread butter on the outside of each tortilla.
  6. Cook quesadillas in a skillet until golden and crispy, about 2-3 minutes per side.
  7. Remove from skillet, dust with powdered sugar, slice, and serve warm with whipped cream.
