Description

These Decadent Fudgy Chocolate Brownie Drops are rich, moist, and packed with intense chocolate flavor. Made with bittersweet chocolate, cocoa powder, and chocolate chips, they offer a perfect balance of fudgy texture and chewy edges. Easy to prepare and quick to bake, these brownie drops are ideal for satisfying any chocolate craving in about 40 minutes.

Ingredients

Scale

Chocolate and Butter

  • 7 oz (200g) bittersweet chocolate, chopped
  • 1/4 cup (56g) unsalted butter

Wet Ingredients

  • 2 large eggs, at room temperature
  • 3/4 cup (150g) granulated sugar

Dry Ingredients

  • 3 tablespoons (24g) cornstarch
  • 1/4 cup (21g) cocoa powder
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt

Add-ins

  • 1/2 cup (85g) dark chocolate chips

Instructions

  1. Preheat Oven: Preheat your oven to 375°F initially, then reduce it to 350°F before baking. Line your baking sheets with parchment paper to prevent sticking and for easy cleanup.
  2. Melt Chocolate: In a heatproof bowl, melt the chopped bittersweet chocolate and unsalted butter together until smooth and glossy, either over a double boiler or in short bursts in the microwave, stirring frequently. Set this mixture aside to cool slightly.
  3. Prepare Batter: In a separate bowl, beat the eggs and granulated sugar together until the mixture is pale and thick, indicating that enough air has been incorporated for a light texture. Gently fold the warm chocolate and butter mixture into the egg mixture until combined.
  4. Add Dry Ingredients: Sift together cornstarch, cocoa powder, baking powder, and salt to avoid lumps and ensure even distribution. Stir these dry ingredients carefully into the chocolate mixture. Fold in the dark chocolate chips for added texture and bursts of chocolate.
  5. Chill Batter: Cover the batter and let it rest for 10 minutes, allowing it to thicken to a fudgy consistency which helps the brownie drops hold their shape when baked.
  6. Bake Cookies: Using a spoon or small cookie scoop, drop spoonfuls of batter onto the prepared baking sheets, spacing them evenly. Bake at 350°F for 8 to 11 minutes until the edges are set but the centers still look slightly soft. Remove from oven and transfer brownies to cooling racks to cool completely.

Notes

  • Use room temperature eggs to ensure better incorporation and volume when beating.
  • Do not overbake; the brownie drops should remain fudgy inside.
  • For extra decadence, sprinkle a pinch of flaky sea salt on top before baking.
  • Store the brownie drops in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
  • Allow the brownies to cool fully before serving to achieve the best texture.
