Instructions
- Prepare the Strawberry Jam: In a large saucepan, combine the strawberries, sugar, and lemon juice. Cook over medium heat, stirring frequently, until the mixture bubbles and strawberries release juices, about 10–15 minutes.
- Use a potato masher or spoon to mash the fruit to desired consistency. Continue simmering for another 10–15 minutes, stirring often until slightly thickened.
- If using, stir in fruit pectin and cook for 2 more minutes. Remove from heat and stir in chopped dark chocolate until melted and smooth.
- Let the jam cool for 10–15 minutes, then transfer to clean jars. Seal when completely cool. Store in the refrigerator for up to 3 weeks or process for longer storage.
