Chicken Chili:

  • 1 1/2 pounds boneless skinless chicken breasts
  • 1 medium yellow onion, diced

  • 2 cans (15 ounces each) Great Northern beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 can (4 ounces) diced green chilies
  • 1 can (14.5 ounces) chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Creamy Topping:

  • 4 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup shredded Monterey Jack cheese

For Serving:

  • Fresh cilantro, chopped
  • Lime wedges

Instructions

  1. Prepare the Chicken Chili: Place the chicken breasts in the bottom of a 6-quart crockpot. Add the onion, garlic, beans, corn, green chilies, chicken broth, cumin, chili powder, oregano, paprika, salt, and black pepper. Stir to combine.
  2. Cover and cook on low for 6 to 7 hours or high for 3 to 4 hours, until the chicken is cooked through and tender.
  3. Remove the chicken, shred it with two forks, and return it to the crockpot.
  4. Make the Creamy Topping: Stir in the cream cheese, sour cream, and Monterey Jack cheese until melted and creamy.
  5. Cover and cook for an additional 10 minutes.
  6. Serve warm topped with cilantro and a squeeze of lime.

  • This chili thickens as it cools; for a thinner consistency, add extra chicken broth.
  • For added heat, stir in chopped jalapeños or a dash of cayenne pepper.
