Description

This Crockpot Hobo Casserole is a comforting and hearty American slow cooker dish featuring layers of thinly sliced russet potatoes, ground beef, onions, and cheddar cheese, all simmered together in a creamy mushroom soup and milk mixture. Perfect for an easy weeknight dinner, it delivers rich flavors with minimal effort, making it an ideal family-friendly casserole.

Ingredients

Scale

Meat and Dairy

  • 1 1/2 pounds ground beef
  • 2 cups shredded cheddar cheese
  • 1/2 cup milk

Vegetables

  • 4 medium russet potatoes, peeled and thinly sliced
  • 1 medium onion, sliced
  • Chopped parsley for garnish (optional)

Soup and Seasonings

  • 1 can (10.5 oz) cream of mushroom soup
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon Worcestershire sauce

Instructions

  1. Brown the Beef: In a skillet over medium heat, cook the ground beef until browned and no longer pink. Drain any excess grease and set the beef aside.
  2. Prepare the Sauce: In a small bowl, whisk together the cream of mushroom soup, milk, Worcestershire sauce, garlic powder, onion powder, salt, and black pepper until well combined.
  3. Layer the Ingredients: Lightly grease the inside of a 6-quart slow cooker. Create the first layer with half of the sliced potatoes, followed by half of the sliced onions, half of the cooked ground beef, and half of the shredded cheddar cheese. Pour half of the prepared soup mixture evenly over these layers.
  4. Repeat the Layers: Add the remaining potatoes, onions, ground beef, and cheese in the same order, and pour the remaining soup mixture over the top.
  5. Cook the Casserole: Cover the slow cooker and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the potatoes are tender when pierced with a fork.
  6. Serve: Garnish with chopped parsley if desired, then scoop portions onto plates and serve warm.

Notes

  • Ground turkey or chicken can be used as a lighter substitute for beef.
  • For a richer taste, substitute cream of mushroom soup with cream of cheddar soup.
  • This casserole pairs wonderfully with a simple green salad or steamed vegetables for a complete meal.
  • To make it gluten-free, ensure the cream soup used is labeled gluten-free.
