- Powder the Roasted Gram: Blend the roasted gram into a fine powder using a blender until smooth, ensuring an even texture for the sev.
- Mix Flours and Butter: In a large bowl, combine the rice flour, chickpea flour, and powdered roasted gram. Add the softened butter and mix thoroughly until well blended.
- Add Spices and Seeds: Incorporate black sesame seeds, cumin seeds, asafoetida, salt, and red chile powder into the flour mixture. Stir well to distribute the spices evenly.
- Knead the Dough: Gradually pour in water while kneading the mixture into a soft, smooth, and non-sticky dough. Add water incrementally for the perfect consistency.
- Heat Oil: Heat the oil in a deep frying pan over medium heat until it reaches around 350°F (175°C), ideal for frying the sev.
- Prepare Chakli Mold: Lightly grease your chakli or sev mold and fill it tightly with the prepared dough.
- Fry the Sev: Press the dough directly into the hot oil in circular shapes. Fry each batch for about 2 minutes on each side until golden and crispy.
- Drain and Cool: Remove the fried sev using a slotted spoon and drain on paper towels. Allow them to cool completely to retain crispness.
- Optional Spicing: For extra flavor, sprinkle the sev with additional spice mix before serving.
