  • 2 tbsp Black Sesame Seeds
  • 1 tbsp Cumin Seeds
  • 1 pinch Asafoetida (Hing)
  • 1 tbsp Salt
  • 1 tbsp Red Chile Powder

  • 2 tbsp Butter (softened)
  • 1 cup Water (add gradually)

  • 2 cups Oil (neutral oil such as vegetable oil)

Instructions

  1. Powder the Roasted Gram: Blend the roasted gram into a fine powder using a blender until smooth, ensuring an even texture for the sev.
  2. Mix Flours and Butter: In a large bowl, combine the rice flour, chickpea flour, and powdered roasted gram. Add the softened butter and mix thoroughly until well blended.
  3. Add Spices and Seeds: Incorporate black sesame seeds, cumin seeds, asafoetida, salt, and red chile powder into the flour mixture. Stir well to distribute the spices evenly.
  4. Knead the Dough: Gradually pour in water while kneading the mixture into a soft, smooth, and non-sticky dough. Add water incrementally for the perfect consistency.
  5. Heat Oil: Heat the oil in a deep frying pan over medium heat until it reaches around 350°F (175°C), ideal for frying the sev.
  6. Prepare Chakli Mold: Lightly grease your chakli or sev mold and fill it tightly with the prepared dough.
  7. Fry the Sev: Press the dough directly into the hot oil in circular shapes. Fry each batch for about 2 minutes on each side until golden and crispy.
  8. Drain and Cool: Remove the fried sev using a slotted spoon and drain on paper towels. Allow them to cool completely to retain crispness.
  9. Optional Spicing: For extra flavor, sprinkle the sev with additional spice mix before serving.
