Description

Instructions

  1. Heat the oil: Heat oil in a heavy pot or deep fryer until it reaches 180°C (350°F). Maintaining this temperature will ensure the nuggets fry quickly and become crispy without absorbing too much oil.
  2. Prepare the dry mixture: In a medium bowl, sift together the all-purpose flour, baking powder, salt, and sugar. Mix well to evenly distribute all dry ingredients.
  3. Prepare the wet mixture: In a separate bowl, whisk the large egg, milk, and melted shortening until fully combined. Gradually add the wet ingredients to the dry mixture, stirring continuously until the batter is smooth and free of lumps. Then gently fold in the drained canned corn.
  4. Fry the nuggets: Using a spoon, carefully drop spoonfuls of the batter into the hot oil. Fry the nuggets for 2 to 2 1/2 minutes, turning occasionally, until they turn golden brown on all sides.
