Instructions
- Preheat Oven and Prepare Baking Sheet: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
- Mash the Beans and Mix Filling: In a medium bowl, mash the drained and rinsed black beans with a fork until mostly smooth but still a bit textured. Stir in the minced chipotle pepper, adobo sauce, cumin, smoked paprika, garlic powder, salt, salsa, and shredded cheese if using, until well combined.
- Warm the Tortillas: Wrap the corn tortillas in a damp paper towel and microwave for about 30 seconds to soften them and make them pliable for rolling.
- Assemble the Taquitos: Spoon about 2 tablespoons of the bean mixture onto the lower third of each warmed tortilla. Roll each tortilla tightly around the filling and place seam side down on the prepared baking sheet to keep them from unrolling.
- Prepare for Baking: Lightly spray or brush the tops of the rolled taquitos with cooking oil to help them crisp up during baking.
- Bake: Bake in the preheated oven for 15 to 18 minutes, or until the taquitos are golden brown and crispy.
