For the Chicken:

  • 1 pound boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 1/2 cup cornstarch
  • 1/4 cup all-purpose flour
  • 1 egg, beaten
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • vegetable oil for frying

For the Sauce:

  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 green onions, sliced
  • 1–2 red chilies, sliced (adjust to heat preference)
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon ketchup
  • 1 teaspoon sugar
  • 1 teaspoon cornstarch mixed with 2 tablespoons water

Instructions

  1. Prepare the Chicken: In a bowl, combine the chicken pieces with salt, pepper, egg, cornstarch, and flour. Toss until evenly coated.
  2. Fry the Chicken: Heat vegetable oil in a deep pan or wok over medium-high heat. Fry the chicken in batches for 4–5 minutes until golden brown and crispy. Remove and drain on paper towels.
  3. Make the Sauce: In a clean skillet or wok, heat sesame oil over medium heat. Add garlic, ginger, red chilies, and green onions. Sauté for 1–2 minutes until fragrant. Stir in soy sauce, rice vinegar, sweet chili sauce, ketchup, and sugar. Bring to a simmer. Add the cornstarch slurry and stir until the sauce thickens slightly.
  4. Combine Chicken and Sauce: Add the crispy chicken to the sauce and toss to coat evenly. Cook for 1–2 more minutes until heated through.
  5. Serve: Serve hot, garnished with extra green onions if desired.
