Instructions
- Cook the beef mixture. In a skillet over medium heat, add ground beef, diced onion, and minced garlic. Cook until the beef is browned and onions are softened, about 7-8 minutes. Drain any excess fat to prevent greasiness.
- Season the filling. Stir in chili powder, cumin, paprika, salt, and black pepper until evenly combined. Remove the skillet from heat and let the mixture cool slightly to make it easier to handle when assembling.
- Assemble the flautas. Lay out a tortilla and place 2–3 tablespoons of the beef mixture on one end. Sprinkle a generous amount of shredded cheese over the beef, then roll the tortilla tightly to form a flauta. Repeat the process with the remaining tortillas and filling.
- Heat oil for frying. In a large skillet, heat 2 tablespoons of vegetable oil over medium-high heat until shimmering but not smoking, enough to cover the bottom of the pan.
- Fry the flautas. Place the flautas seam-side down in the hot oil and cook for 2–3 minutes per side, turning carefully, until each side is golden brown and crispy. Work in batches to avoid overcrowding.
- Drain and serve. Remove the cooked flautas with a slotted spoon and drain on paper towels to absorb excess oil. Serve them warm topped with sour cream, guacamole, salsa, and a sprinkle of chopped cilantro for freshness.

- For a healthier alternative, bake the flautas at 400°F (200°C) for 15–20 minutes, flipping halfway through, until crispy and golden.
- Warm corn tortillas lightly before rolling to prevent cracking and breakage during assembly.
