- 6 cups chicken broth
- 8 lasagna noodles, broken into pieces
- 1 (12-ounce) can evaporated milk
- 4 ounces cream cheese, softened
- 1½ cups shredded mozzarella cheese

- 2 cups fresh spinach, chopped
- ¼ teaspoon crushed red pepper flakes (optional)

Instructions
- Heat olive oil: In a large pot over medium heat, sauté onion until softened. Add garlic and cook briefly.
- Cook chicken: Add chicken, salt, pepper, and Italian seasoning. Cook until browned.
- Add broth and noodles: Pour in chicken broth, add lasagna noodles, and simmer until noodles are tender.
- Make it creamy: Stir in evaporated milk, cream cheese, mozzarella, and Parmesan until melted and creamy.
- Finish the soup: Add spinach and red pepper flakes, simmer until wilted. Garnish with parsley and serve hot.
Notes
- To save time, use pre-cooked shredded rotisserie chicken and reduce simmer time.
- For extra richness, substitute part of the broth with heavy cream.
